An avocado a day....

Recently a study came out that eating an avocado each day may lower your cholesterol. With my terrible cholesterol, I decided to try to eat an avocado each day. So I decided today I would have my avocado at breakfast.

Andrea's avocado huevos rancheros:

1 avocado
1 egg
Shredded cheddar cheese
Salsa
Sour cream



 Cook the egg in your favorite way. I scrambled mine. Cut up the avocado and put it on your plate.

 Top the avocado with your cooked egg.


Top with shredded cheese.
Top with salsa.
Add a dollop of sour cream.

Enjoy your deliciously low carb breakfast!

Why low carb?
On Monday I went to my primary care physician for a physical. He ordered labs, checked me over and talked to me for a while. I told him that I suspect that I have diabetes and showed him a log of my blood sugars. He ordered a low carb diet.

My lab work came back and my blood glucose was a bit high and my triglycerides and LDL cholesterol was through the roof. He sent me a message on my electronic chart that he wants me to continue the low carb diet and come back in 4 months.

So I have 4 months to get my blood glucose and cholesterol in check.
